I’m in Aus and maybe our leeks are different, but 3 leeks is an insane amount to be adding.
I also think it could do with a few more herbs, but the dump bag method worked well and took so much of the pressure off dinner. Thank you!

I’ve made this soup a few times. I use boxed low sodium veg broth instead of the cubes, switched out the parsnips for potatoes and added zucchini. I blend it all up so my kids can’t see what’s in it. Sprinkle with a little grated cheese when I serve in the bowl.

So thick and creamy and I get at least 8 regular bowl servings out of it. I puree the whole of it because I don’t want to eat bits of leek. I add 2 tablespoons of salt at the beginning, then adjust at the end
