In my opinion way too much cumin. All flavours just disappear. If someone is in love with this spice this recipe will be on the spot. For the rest I’d recommend 1 TSP of cumin just to give this dish a little depth of flavour!

In reply to Jen. I always add much less stock than suggested with these recipes. Can add to, but not take out unless you boil it to death at the end which ruins the ingredients. Hope this helps.

Great recipe. To put a twist on this, when we put the corn in at the end to heat through for a few minutes, I also put the capsicum in at this time and mix through as per normal, then I spread about 12 raw deveined and butterflied large raw prawns on top, let it heat through and the heat will cook the prawns. Then sprinkle the spring onions on top, no need for the cheese. This makes it a bit more gourmet. Looks great and tastes great 😁
