This was so good and so easy. I cooked the duck the evening before, shredded it and left it in the fridge overnight. I put it under the grill to warm up and go a bit crispy when we were ready to eat the next day.

I chilled the juices in the fridge overnight too – this made it easier to skim the excess oil off the top because the duck obviously releases a huge amount of fat. Then I just reduced it down for ages until it became a silky smooth thick sauce that you could dollop all over the pancakes.

We made our own pancakes (really easy, recipes are online) because our local supermarket didn’t stock them.
