Love this, even my fussy 3yr old scoffed it 🙂 I couldn’t find sun-dried tomato paste so chopped up a few sun-dried tomatoes from a jar and fried the chicken in the oil (always adds great flavour). Trying with boneless thighs this time as found the bone-in ones left rather a lot of little bone and gristle bits in the mix, which isn’t great for small people.
