I learnt a few years ago, and now do this all the time, that you don’t need to cook the cauliflower beforehand. I cut up the florets and put them in a baking dish. Make the cheese sauce. Pour it over and then bake in the oven.

If making 2 days before. Do I drain the cauliflower, cover and store or leave in water? Or i make it completely and then cover and store?

so if you only go to step 4 to cook in advance you dont put the sauce over the cauliflower?
