Didn’t have quite the amount of courgettes but used up 4 kingdom carrots. I only use extra lge eggs so added 20 grams of flour and 25g panko breadcrumbs to original mixture plus various other fresh herbs to use up. They were absolutely delicious as confirmed by my (only meat eating and non liking courgette) husband. This amount made 9 patties using a 8cms pastry cutter and densely filling them to the brim by patting down mixture with a table spoon, directly onto a non stick papered oven tray. They started to get too brown on the high temp. so reduced oven to 170/180 and cooked a little longer. Already been asked when I will make them again!

Can they be cooked in a dry fryer

As some members of my family are gluten intolerant, I substitute flaxseed meal for the flour and breadcrumbs. This works well as a binding agent and adds to the protein content . These fritters are a good meal for a family.
