I did play with the recipe a bit:
• Used a little more than half the sausage and added two strips of cut-up bacon, then cut up the sausages smaller than suggested
• Used half an onion and a whole shallot
• Used mini sweet peppers instead of bell peppers
• Used Rotel tomatoes with jalapenos (mild) instead of the canned tomatoes and cooked the mix longer after adding this
• Added two cloves of garlic, minced, after the tomatoes and cooked for another two minutes
• Added the beans, BBQ sauce, Worcestershire sauce and pepper, but no salt because I added bacon earlier
• Added 2 T of Lawry’s Hickory Brown Sugar marinade with the sauces
• Let that cook down for 20 minutes to thicken the mix.
• Used rustic-cut Cheddar-Jack cheese along with Havarti and Parmesan in the potatoes and then poured more Cheddar-Jack on top.
• Baked it at 350° for 20 minutes in my 7×11″ dish, even though everything was already hot

It turned out fantastically well. Adding this to the rotation.

This is delicious! I put 2 onions in, and extra sausages and it made loads. Froze the extra portions- a definite winner in this house!

I keep meaning to come back and comment. I found myself without tinned tomatoes when making this one afternoon, so added a little extra barbecue sauce and Worcestershire sauce. It was still amazing. Just in case anyone else wants to try without the tomatoes.

I found this so easy to make and very tasty. My Grandaughter loved it and she can be fussy but we had a clean plate from her!
I shall be trying a lot more of your recipes as they all look delicious.
