Vegetarian Slow Cooker Recipes

I am really enjoying exploring more and more vegetarian options for the slow cooker. All of these veggie recipes (and some vegan) have been tested and tested to make sure the flavours are just right, while keeping many other factors in mind:

Is it satisfying as a full meal?
Is it tasty enough?
Can it be adapted for meat or other types of cooking?
Is it healthy?

I’m happy to say we have a really good variety of recipe options for this collection now, including curries, stews and even a lasagne.

I should add that they’re not only suitable for vegetarians! Meat-eaters will enjoy them too, and some of them are so quick that they’re ideal for budget-friendly lunches as well as dinners.
